Ancient Grain Salad

Ingredients

  • 1 cup mixed ancient grains (farro, quinoa, amaranth)
  • 2 cups vegetable broth
  • 1 sweet potato, cubed
  • 1 red onion, sliced
  • 2 cups kale, chopped
  • 1/4 cup tahini
  • 2 tbsp lemon juice
  • 1 clove garlic, minced
  • Olive oil, salt, and pepper

Instructions

  1. Preheat oven to 400°F (200°C). Toss sweet potato and onion with olive oil, salt, and pepper. Roast for 25-30 minutes.
  2. Meanwhile, cook the ancient grains in vegetable broth according to package directions.
  3. In a small bowl, whisk together tahini, lemon juice, minced garlic, and a splash of water until smooth.
  4. Massage the chopped kale with a little olive oil until softened.
  5. In a large bowl, combine the cooked grains, roasted vegetables, and kale. Drizzle with the tahini dressing and toss to combine.
