Ingredients

  • 1 cup rolled oats
  • 1/2 cup almond butter
  • 1/3 cup maple syrup
  • 1 tbsp culinary-grade matcha powder
  • 1/4 cup shredded coconut
  • 1 tsp vanilla extract
  • Pinch of sea salt

Instructions

  1. In a large bowl, mix together the oats, matcha powder, shredded coconut, and salt.
  2. Add the almond butter, maple syrup, and vanilla extract. Stir until a sticky dough forms.
  3. Cover and chill the dough in the refrigerator for 30 minutes to firm up.
  4. Roll the dough into bite-sized balls (about 1 tablespoon each).
  5. Store in an airtight container in the refrigerator for up to a week.
