Raw Zucchini Pesto

A light, refreshing, and entirely raw pasta alternative tossed in a vibrant, nutrient-dense basil pesto.

Ingredients

  • 2 large zucchinis, spiralized
  • 2 cups fresh basil leaves
  • 1/2 cup pine nuts or walnuts
  • 1/3 cup extra virgin olive oil
  • 2 cloves garlic
  • 1/4 cup nutritional yeast (optional)
  • Salt and pepper to taste
  • Cherry tomatoes for garnish

Instructions

  1. Spiralize the zucchinis into noodles and set aside in a large bowl.
  2. In a food processor, combine basil, pine nuts, garlic, and nutritional yeast. Pulse until coarsely chopped.
  3. With the processor running, slowly drizzle in the olive oil until a smooth paste forms.
  4. Season the pesto with salt and pepper to taste.
  5. Toss the zucchini noodles with the pesto until well coated. Garnish with halved cherry tomatoes.
