Ingredients

  • 1 cup quinoa, rinsed
  • 2 cups coconut milk
  • 1 tsp ground turmeric
  • 1/2 tsp cinnamon
  • 1 tbsp maple syrup
  • Fresh berries for topping
  • Sliced almonds

Instructions

  1. In a medium saucepan, combine quinoa, coconut milk, turmeric, and cinnamon.
  2. Bring to a gentle boil, then reduce the heat to low, cover, and simmer for 15 minutes.
  3. Remove from heat and let sit covered for 5 minutes.
  4. Fluff with a fork and stir in maple syrup.
  5. Divide into bowls and top with fresh berries and sliced almonds.
